Pina Colada Balls

Pina Colada Balls


Ingredients

  • 1 (12 ounce) package vanilla wafers, crumbled
  • 1/2 pound ground almonds, ground
  • 6 ounces white chocolate
  • 1/2 cup rum
  • 1/4 cup orange marmalade
  • 1/4 cup key lime juice
  • One can sweetened condensed milk
  • How much? Dried pineapple
  • 1 pkg. flaked coconut
  • 1 cup powdered sugar
Directions
  1. Mix 1 box (12 oz) vanilla wafers with 1/2 lb ground blanched almonds, and coconut
  2. Put some of your cookie mixture with a few of the dried pineapples and chop in chopper.  Keep doing that until all are chopped (the crumbly mixture keeps the pineapple from all sticking together.  Add pineapple to the mix.
  3. Melt six 1 oz squares white chocolate in a double boiler
  4. While chocolate is melting, add rum and sweetened condensed milk to mixture.
  5. Stir in the melted chocolate.
  6. Shape into 1 inch balls and roll in powdered sugar mixture. Store in refrigerator.
